Uzhunnu Vada with Coriander Chutney
My uzhunnu vada is sans the 'hole'. That's why some of you looking at the picture maybe be wondering why that doesn't look right. Trust me it tastes delicious. This is a very easy snack that you can make for guests. The coriander chutney goes well with any sort of Indian fritter.
This recipe I got from a dear friend of mine. We used to leaves in townhomes opposite each other other and many evenings we would find yummy snacks on our doorstep. Our neighbors being from Tamil Nadu and the masters of dosa, idly and vada,shared this recipe with us and it was an instant hit!
Prep Time-1 hour ( soaking time) Actual Cook Time-30 minutes
Ingredients
1 cup uzhunnu (Urad dal)
1 inch of ginger (finely diced)
1/4 tsp coarsely ground pepper
1/2 an onion (finely diced)
1-2 green chillies (finely sliced)
Curry leaves-1 sprig
Salt to taste
Oil for frying
Directions
1.First soak the uzhunnu in lukewarm water for about an hour.
2.Take your uzhunnu and drain off the water. After that you grind it in your grinder/osterizer with very little water. You must add just enough water so as to get a a very coarse batter. If it's too runny it won't fry well.
3.To this batter you add the remaining ingredients and mix with a spoon. Make sure the ginger,onion and chillies are finely diced and the curry leaves torn up into small pieces as well. You don't want to bite into a big piece of ginger or onion.
4.Heat enough oil so to cover the vadas while frying. Once the oil is heated drop spoonfuls of batter into the oil. They will float on the top and turn golden brown when ready. About 5-7 minutes. Scoop them out and onto a plate lined with paper towels.
Serve hot with chutney.
Coriander Chutney Ingredients
A buch of coriander-washed
Thumb size piece of Ginger
2 green chillies ( you might want to use just one if you don't want it to be spicy)
Grated coconut-a little less than 1/4 cup
Lemon juice-1 tbsp
Salt to taste
Add all these ingredients to the grinder and let it go for a few minutes. Add water little at a time,just enough to get the chutney ground into a paste. Add salt and stir.
